		</div><p>One of the foods that we grow during the summer is yellow squash. And we LOVE to eat it in a variety of ways.<br />

<p>I think a lot of people think the only way to eat yellow squash, is to slice it, put it in a pan of water and boil or steam it! And don&#8217;t get me wrong &#8211; it&#8217;s great that way, with a little bit of butter on it.<br />

<p>We also like to cut up our yellow squash into chunks and saute it with thin slices of onion &#8211; in a pan, using butter. Actually we saute the onions first, and when they start to turn a golden color &#8211; we add the squash chunks and keep stirring til everything is cooked and almost brown!<br />

<p>But my husband&#8217;s favorite way to eat squash, is to slice it, and then bread it and cook it in oil &#8211; just like egg plant. It&#8217;s a lot of work &#8211; but I usually make a whole bunch and then we freeze what we don&#8217;t eat &#8211; and can reheat them at a later time.<br />

<p>There  are a number of recipes I&#8217;ve found on line for yellow squash casserole, but hubby isn&#8217;t too fond of cheese and most of those call for some kind of cheese being added. I like it that way &#8211; but&#8230;I tend to cook more for hubby than for me. I can eat it any way I fix it.</p>

		</div><p>It&#8217;s time for the Blog Carnival again, and this month, I&#8217;ve picked the following subject:</p>
<p>The first day of spring is just around the corner. What one sure &#8220;first sign of spring&#8221; tells you that winter is finally over and the cycle of life is ready to begin anew?</p>
<p>I love driving around our town, now, and seeing the red bud trees in bloom and the bradford pears starting to bud. These are sure signs that spring is coming. Daffodils are popping up. When we lived in another town, we would have lots of crocus growing and those would be coming up as well.</p>
<p>We have a farm, and really our first sign of spring happens well before the official day of spring. My hubby will start ordering his seeds, get on his tractor and start preparing the ground for planting, clear out the weeds, and map out where he will plant what. We have about 35 acres that we plant, so it is a big production. </p>
<p>Usually the first thing that goes into the ground are potatoes. The last 2 years have been very bad for potatoes. 2 years ago, it rained so bad that the potato plants rotted in the ground. Last year it was so dry that they never grew. With the large number of seed potatoes that he&#8217;s gotten this year &#8211; we are hoping for a better crop.</p>
<p>While he waits for the air to warm up a little, and checks the ground for a slight rise in temperature, he is readying his seed potatoes &#8211; whole potatoes that have eyes &#8211; he cuts them into wedges/cubes &#8211; each one with an eye to create a plant. Red potatoes and white potatoes and yukon gold.</p>
<p>Blue birds have shown up &#8211; hopping on our porch railing and then popping down to grab a piece of dry cat food. Robins are showing up as well. I love spring time, and keep hoping that winter won&#8217;t show up again until after fall!</p>

<p>So the subject today is: We are in the middle of winter! Write something about you/your family&#8217;s winter experiences. This will be fun!</p>
<p>I do not like winter! I do not like snow and ice! Ok, so I&#8217;m a warm weather lover &#8211; and that&#8217;s ok. I don&#8217;t have to like winter to write about it <img src='http://www.sandists.com/WordPress/wp-includes/images/smilies/icon_biggrin.gif' alt=':D' class='wp-smiley' /> </p>
<p>When I was a college student in Maryland, I remember one winter where we had a blizzard. I had a VW bug, and finally got it warmed up enough to try to get to classes. Part of the drive was to go over a hill. Now it wasn&#8217;t a large one, but just steep enough, that my VW bug could not make it up to the top through all the snow. Ah, this was in the day before cell phones and email (omg &#8211; it was that long ago? &#8211; this was almost 50 years ago) that I didn&#8217;t realize that classes had been canceled. I loved college that much and wanted to get there!</p>
<p>Over thirty years ago, 1980 to be precise, we had 3 blizzards &#8211; 1 the beginning of January, 1 the beginning of February and 1 the beginning of March &#8211; see a trend here? </p>
<p>I was a Tupperware manager at the time, and didn&#8217;t realize that the city of Norfolk was closed because of the blizzard. So a bunch of us, managers and dealers were driving towards the Tupperware office and when we got there &#8211; it was closed. What a lark! We didn&#8217;t have any problem driving the streets &#8211; but for the city to be shut down was rare.</p>
<p>That was the year that we had the Circus Blizzard. The circus was in town and the concert hall where it was taking place became the hotel for all the attendees as the snow blanketed the city and closed everything down. There was no way for those people to get out. Every year since, when the circus comes to town, we always check the weather for the possibility of snow!</p>
<p>Over the years, we have had little or no snow. Last year it snowed so much in one 2 day period that it was touted as being more snow since the 1980 blizzards.</p>
<p>This year, we have had sooo much snow, over several weekends, that it&#8217;s now touted as the 3rd largest snow accumulation in 100 years. Ha! What will next winter be like &#8211; are we getting ready for an ice age??? Is it global warming or just something that happens now and then. We shall see</p>
